Here’s what’s needed for a Chicago style bibliography when you are citing a section of a book.

It’s almost identical to a book citation with the addition of the chapter or section used.

Mark Jaffe’s dinosaur book would appear in the Chicago Humanities bibliography like this:

Jaffe, Mark. "Chapter One." in The Gilded Dinosaur: The Fossil War Between E.D. Cope and O.C. Marsh and the Rise of American Science, 1-8. New York: Crown Publishers, 2000.
